Remember, all vegetables are allowed, whether fresh, frozen, dried, juiced, or canned. Similarly, all fruits are permitted, but make sure dried fruit doesn’t contain added sugar (check ingredients to be sure).

 

Cilantro & Lime Rice Bowl

  • Ingredients:
    • 1 cup cooked brown rice
    • 1 cup cooked black beans
    • 1 cup mixed vegetables (bell peppers, broccoli, carrots, spinach) – fresh, frozen, dried, juiced, or canned
    • 1/2 avocado, sliced
    • Fresh cilantro leaves (for garnish)
    • Lime wedges (for serving)
    • Optional toppings: salsa, green onions, hot sauce
  • Instructions:
    • Cook brown rice according to package instructions and set aside.
    • Warm black beans in a skillet over medium heat. Season with salt and pepper if desired.
    • In the same skillet, saut√© mixed vegetables until tender. Use fresh or frozen, dried, juiced, or canned vegetables.
    • To assemble, divide rice into bowls and top with black beans, vegetables, sliced avocado, and cilantro.
    • Serve with lime wedges for extra flavor.

  • 1 cup chickpeas, drained and rinsed (canned or cooked from dry)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced cucumber
  • 1/4 cup sliced Kalamata olives
  • 2 tablespoons crumbled feta cheese (optional, omit for vegan version)
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:
