The Alkaline Immune Boosting Vegetables Soup

Yields1 Serving

 4 big handfuls of kale, stalks removed and roughly sliced
 8 brussels sprouts, shaved thin
 1 carrot, shredded or thinly sliced
 ½ cup of canellini beans (or any other beans you like!)
 2 tbsp of almonds, roughly chopped
 1 tbsp of cashews
 1 tbsp of pumpkin seeds
 1 cup of basil, chopped
For the Tahini Dressing
 Half a large avocado
 1 tbsp of tahini
 1 garlic clove
 1 tbsp of olive or flax oil
 2 tbsp of fresh lemon juice
 Cracked black pepper
 Pinch of Himalayan salt

This is so simple – first put all of the dressing ingredients except for the water into a blender or food processor and whizz until smooth. If you want to thin the consistency out a little, add a little water, a tablespoon at a time


Now make the salad by mixing all of the salad ingredients together


Pour over the dressing and stir well




As an option, you can add another step by mixing just the kale, sprouts, carrots and radishes with about a third of the dressing and then leaving to stand for 5-10 minutes to allow the kale to soften a little, then add the rest of the stuff and the rest of the dressing.
